Vegan Spaghetti Squash Recipe

Ingredients
  

  • 1 large spaghetti squash
  • 1/4 cup vegan parmasean cheese (or regular if you are not dairy free) we love VioLife parmasean cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp oregano
  • 2 tbsp EVOO

Instructions
 

  • Set oven to 400F. Line a cookie sheet with tin foil. Using a very sharp knife, slice the squash down the middle (length). Generously drizzle with oil. Season with salt, pepper and oregano.
  • Place face down on the cookie sheet. Bake for 40 minutes. Let cool for a few minutes. Scrape out with a fork. Set on your plate and add shredded cheese (we use vegan cheese). Enjoy!
