- 1 large spaghetti squash
- 1/4 cup vegan parmasean cheese (or regular if you are not dairy free) we love VioLife parmasean cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 2 tbsp EVOO
Set oven to 400F. Line a cookie sheet with tin foil. Using a very sharp knife, slice the squash down the middle (length). Generously drizzle with oil. Season with salt, pepper and oregano.
Place face down on the cookie sheet. Bake for 40 minutes. Let cool for a few minutes. Scrape out with a fork. Set on your plate and add shredded cheese (we use vegan cheese). Enjoy!
