Smashed Fingerling Potatoes
These potatoes beat out fast food fries any day!
Ingredients
- 15-20 fingerling potatoes
- 1 tbsp Earth Balance butter
- 1 tsp dried oregano
- 1/2 tsp Himalayan salt
- 1/2 lemon
Instructions
- Place potatoes in microwavable bowl and warm them up in the microwave for 9 minutes. While they are warming up, heat up your cast iron skillet (about 1 min). Once the 9 mins are up, time to season the potatoes. Squeeze the lemon, sprinkle with the oregano and salt. Place the butter into the warm skillet and swirl around to coat the entire pan. Drop in the potatoes. Smash each potato slightly with a fork. Cover the pan, letting them cook for about 4 minutes before flipping them onto the other side for another 4 minutes. Viola, ready to be served.
