I’ve always wanted to be a fan of spaghetti squash, but never had the right recipe – until now. And it truly couldn’t be any easier. All you need is a spaghetti squash, salt, pepper, oregano, EVOO and dairy-free cheese (if you’re going the allergy-friendly route like we do!).
Vegan Spaghetti Squash Recipe
Spaghetti squash feels like a hassle until you find the perfect recipe; here it is! Our simple vegan spaghetti squash recipe will help you have dinner on the table with minimal effort.
Ingredients
- 1 large spaghetti squash
- 1/4 cup vegan parmasean cheese (or regular if you are not dairy free) we love VioLife parmasean cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 2 tbsp EVOO
Instructions
- Set oven to 400F. Line a cookie sheet with tin foil. Using a very sharp knife, slice the squash down the middle (length). Generously drizzle with oil. Season with salt, pepper and oregano.
- Place face down on the cookie sheet. Bake for 40 minutes. Let cool for a few minutes. Scrape out with a fork. Set on your plate and add shredded cheese (we use vegan cheese). Enjoy!
