JANUARY 2021
While, yes, we’re in the few final days of 2020, something about switching gears into 2021 feels right. This month’s “Inspired By” bloggers were handpicked by our kids – Emerson and Rhea. They are always on the hunt for something sweet (I mean what kid isn’t), so here are some delicious dairy, egg and nut-free treats we encourage you to try!
Allergylicious’ Chocolate Hot Molten Lava Cake
A perfect dessert for a celebration like New Year’s Eve or Valentine’s Day, this tastes like a hot lava cake you’d order from a high-end steak house. The recipe gives you an option for either GF or all-purpose flour and because we don’t have any issues with gluten, we opted for all-purpose flour. Also, we added on about 10 minutes to the cooking time, baking them for 25 minutes. Our kids DEVOURED them minutes after they cooled. We HIGHLY recommend the recipe – linked here. Minimalist Baker’s Vegan + Nut-Free Tiramisu
I have a soft spot for cookbooks. I can’t walk into a bookstore without buying one. We’ve been following Dana Shultz of Minimalist Baker for sometime now, and have her most recent book – Minimalist Baker’s Everyday Cooking. In that book she has a tiramisu recipe that’s OH EM GEE ah-mazing. We made a few changes to it, including using coconut milk instead of almond milk, but otherwise followed it to a tee. Also, for the marscapone frosting we recommend using Daiya Foods cream cheese over any other as it creates the creamiest frosting. While Minimalist Baker doesn’t have this tiramisu recipe on their site, check them out as they are hundreds from fantastic recipes to choose from! Bianca Zapatka’s Vegan and Nut-Free Blueberry Babka
I had some extra time in the kitchen earlier this fall and wanted to make a special treat for our family. I grew up eating babkas – as they are a sweet Polish bread – and like every mom, wanted to share this indulgence with Adam and the kids as well. We found Bianca Zapatka’s blueberry babka recipe and subbed in chocolate instead to make this lovely treat pictured below. To sub in chocolate I used 1 cup of Enjoy Life Chocolate chips. I melted them for 30 seconds at at time (about 1 1/2 minute in total) in the microwave before spreading them on to the dough. The only other changes from Bianca’s recipe is that we used So Delicious coconut milk instead of soy milk and I didn’t make the lemon glaze.
