When did you all start cooking with your kiddos? This is the first recipe we’ve somewhat co-created with our then six year old. For Christmas he asked for a mini-waffle maker… anything that empowers our kiddos to love food (opposed to being afraid given their allergies) I say yes to… dairy, egg and nut-free these cinnamon waffles are a new staple in our home. Here’s the recipe, give it a go and tag us in your creation!
Cinnamon Waffle (Dairy, Egg and Nut-Free)
Ingredients
- 1 cup all purpose flour
- 1 tsp sugar
- 2 tsp baking powder
- 1 cup coconut milk (we use so delicious)
- 1/3 cup unsweetened applesauce
- 1/2 cup EVOO or Avocado Oil (we've used both and equally delicious)
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- In a medium bowl sift flour, sugar, baking powder, cinnamon and salt. Then in a separate bowl whisk milk, applesauce, EVOO and vanilla extract together. Combine dry and wet ingredients using a whisk or handheld mixer. Coat your waffle maker – we use a super cute mini waffle maker – with butter or oil. Pour two heaping spoonfuls of batter. Cook until golden brown (about 2 min). Serve with maple syrup and a side of banana or strawberries and viola, an easy dairy, egg and nut-free waffle!
