“Eat Your Veggies!” proclaims the T-shirt Adam got me for Christmas two years ago. And, while I bake A LOT, I stand by that statement. Veggies are my jam and I desperately try to make them our kids’ jam too. Rhea loves them while Emerson takes some work. I dreamt up this magical meatballs recipe simply to hide the veggies, but was blown away by the sweet and savory taste. Perfect over any type of pasta, we top them with Rao’s Sensitive Marinara Sauce (yay, no garlic!). I hope you like them as much as well do!


Air Fryer Healthy Meatball Recipe
Ingredients
- 1 lb ground pork or ground turkey for this particular recipe, we used pork
- 2 medium sized sweet potatoes
- 1 cup finely chopped broccoli
- 1/2 cup panko "breadcrumbs"
- 1.4 cup coconut milk we use so delicious
- 2 tsp Earth Balance vegan butter
- 2 tsp oregano
- 1/2 tsp salt
- 2 cups Rao Sensitive Marinara Sauce
Instructions
- We use the air fryer for this recipe, but if you are using the oven, preset at 380!
- Grab two medium sized bowls. Heat up sweet potatoes in the microwave for nine minutes. Slice open and let cool. Scoop out sweet potatoes into a bowl. Add in butter and coconut milk. Sprinkle salt. Mash until little to no lumps.
- Either use fresh broccoli or frozen. If frpzen follow directions on the bag. If fresh, finely chop the broccoli and place it in a microwaveable safe bowl. Warm for 3 minutes / we use these cute covers (pictured in Instagram)
- Put ground turkey or pork into a a bowl. Add in sweet potatoes and broccoli. Add in seasoning. Mix well, I use my hands. Add in panko bread crumbs.
- If making in the air fryer, makes about 12 medium size meatballs on a plate. We preset it to 380 for 25 minutes in the air fryer. Using ice creams scooper scoop into air fryer. Once finished (should be 160 degrees). Serve with warm rap sauce over pasta.
- If you are using the oven, same setting – 380 for 25 minutes.
